Our olive groves are located in the Montes de Toledo, a hilly mountain range in the heart of the Iberian Peninsula.

Unlike the flat plains of other regions, our trees grow in high-altitude terrain with cold winters and dry summers. This natural stress forces the olive trees to fight for survival, resulting in a higher concentration of polyphenols and antioxidantsThe result? An oil with exceptional stability and the intense, spicy character of the genuine Cornicabra variety.

We are privileged to farm alongside Cabañeros, known as ‘Spain’s Serengeti’.
Our proximity to one of Europe’s best-preserved Mediterranean forests guarantees clean air and rich biodiversity, which acts as a natural shield for our crops. Here, our olives grow in harmony with a unique ecosystem, giving every drop of Olimancha a purity you can taste.
